“Uniqueness in diversity” – is often said about Chernivtsi and Bukovyna. This is because, in addition to Ukrainians, many people of other nationalities lived in the region. Most of Romanians and Moldovans. There also were Germans, Poles, Jews, Czechs, Slovaks, and Hungarians. Such a centuries-old neighborhood of national traditions and culinary preferences, of course, had a significant impact on the creation of colorful Bukovynian cuisine.

A special place in traditional Bukovynian cuisine is occupied by dishes made from corn flour. Therefore, during visiting the region, it is definitely recommended to try Hutsul banush. It is a hearty and delicious breakfast or lunch that gives you energy for the whole day. It is mostly served with brynza cheese, shkvarky, onions and mushrooms. Places in Chernivtsi , where you can order banush: “Fayno”, “Hata”, “Gopachok”, “Goyra”, “Chicheri”.

Mamalyga is an integral part of Bukovyna cuisine. In some areas, the love for this dish, which is also made from corn grits, was influenced by the Moldovan culinary tradition. Places in Chernivtsi where you can order mamalyga: “Gopachok” and “Chicheri”.

 

For fish lovers, carp fried in corn flour is a must-try. Places, where it is served: “Fayno”, “Gopachok”. 

 

Stuffed fish. Any Bukovyna celebration, whether it's a wedding or a christening, cannot do without stuffed fish. This dish is difficult to prepare, but tasty and quite unusual. It is called "Gefilte Fish" in the Jewish manner, but it is mostly prepared for a festive table. Where you can try? Holubtsi (stuffed cabbage rolls). Bukovynian holubtsi stand out among other. Housewives keep the secrets of cooking Ukrainian dish. There are made from fresh or sauerkraut. Places, where we recommend trying cabbage rolls: “Gopachok” (jewelry holubtsi rolls from the oven), “Panska Huralnya” (punk holubtsi), “Fayno”,  and “Hata”.

Mushrooms soup. It made from dried mushrooms and thickened with toasted flour and onions. Places, where you can order it: “Gopachok”, “Fayno” and “Chicheri”. 

 

Another traditional dish that will tempt you while traveling through Bukovyna and Chernivtsi is pyrohy (dumplings). You should to try it, they are delicious and come with different fillings (the most common is potatoes and cabbage, salty or sweet cheese).  They also make dumplings with mushrooms, sweet nachynka, and poppy. Places in Chernivtsi where you can order delicious pyrohy: “Fayno”, “Hata”, “Gopachok”, “Goyra”, “Chicheri” and “Panska Huralnya”.

Nachynka – is an exclusive dish – very tasty but also expensive. That’s why it's mostly cooked on holidays. In Bukovyna, you can hachynka with meat from the oven, or its sweet version - black, white or kapronovu "babu". In Chernivtsi, the  nachynka with meat is served at the “Gopachok” restaurant, and the "black baba" dessert is served at the “Fayno” restaurant.
